Lemon EO, of course... I would only use organic cold pressed citrus oils
for flavoring!

and depends on the recipe... I generally guestimate about 3 drops or so to
= "the juice of one lemon"

saves my fingernails and knuckles from the grater!

I ALWAYS use the appropriate citrus eo in place of grated rind.
